Finca Sobreño Ildefonso is the leading brand of the house. It has a quality worthy of bearing the family name proudly. For this reason, they chose the oldest Majuelo vines approximately 80 years old, which involves some tiny productions, deep roots under the alluvial gravelly Duero soil and the identification of the well-known Toro wine.
Made entirely with Tinta de Toro grape, after the harvest being collected in small boxes the grape was selected by hand, grape by grape. After having the stems removed, a pre-fermentative cold maceration was carried out at 8° C for 8 days in order to extract all their fruit and varietal potential. The grapes were turned into open deposits of 2,000 liters of capacity to carry out the alcoholic fermentation and maceration with the skin for 25 days. To extract moderately the colour and polyphenols the grapes were manually stirred 3 times a day. At the end of this time the fermentation was carried out in new French barrels to complete the malolactic fermentation and to continue an ageing in these containers for 18 months shuffling every 6 months.
A red wine full of power and complexity. A fine wine, rich in mineral nuances combined with toasted memories of chocolate, blackberry jam and minerals with nuances of dry stone with a warm and delicious aftertaste.
